I keep hearing that northerners do not know what barbecue - and I guess I did not! I feel like something cooked on a barbecue grill, preferably with barbecue sauce.

Apparently, it's something different. What in the south!?

Firstly is there a big difference between grilling and BBQing.

Grilling is what most of us do that is to say, put something (chicken, steak, burgers) on a hot grill and cook fairly quickly using direct high temperature. Nothing wrong with that except that it is grilling and not considered real BBQ.

Real barbecue is another matter and involves using low temperature and smoke. Ribs, etc. breast is cooked over low or indirect heat and smoke used to cook things through. This process can take hours and sometimes all day.

With the foregoing in mind, we have 4 different "spaces barbecue" in the country that everyone knows things are different.

Carolina, which are known especially for pork and pulled pork and they usually use a vinegar based sauce.

Memphis, which is also the pork and pork ribs in particular, and they tend to use a slightly sweet tomato-based sauce.

Kansas City known for prime rib and usually use a basic tomato sauce that is slightly less sweet than the kind in Memphis.

Texas itself, known for beef, except in this case, it is beef brisket that is usually dry and rub then put in a smoker over low heat for several hours and in some cases all day. The best BBQ joints smoke their brisket very low for some time until 8:00.

You can bet they're not talking about the Original BBQ - which was a cow's head is buried in a pit with hot stones and covered for several hours until cooked head.

Currently, Texas BBQ is smoked, often made of walnut or mesquite. The meat is seasoned before cooking with a spice mixture (dry) or cooking sauce. It is also often sprinkled with cooking sauce.
It is often served with a tomato sauce with a slightly sweet taste.

In Texas we do anything on the grill, and it is a barbecue ... All of Briskets ribs, sausage, chicken, Texas BBQ is normal. Served with Mexican rice, beans, potato salad and bread.

Texas barbecue is cooking low and slow ... usually with smokers.
